No Bake Strawberry Lime Mini Cheesecakes

I have an easy dessert to share with you today for the last days of summer! It’s kind of funny that Labor Day is considered the “end” of summer, because I actually find that September is just as hot. So maybe we’ll just have to enjoy some mini cheesecakes then too.

But I don’t think you’ll be tired of these creamy, easy cheesecakes any time soon. They have a super simple butter & honey graham cracker crust, a quick mixing cheesecake topping and some lovely fresh fruit for decoration. Fresh from the refrigerator, a chilled dessert is exactly what you need on a sticky hot day. And these little darlings are just the right size, nestled into a cupcake liner for easy serving and clean up! No Bake Strawberry Lime Mini Cheesecakes

Lime is a favorite citrus of mine, as evidenced by the second lime recipe in a row. (Did you miss the coconut lime sugar cookies? ) But if lemon is more your flavor, it can easily be substituted! The citrus just gives the cheesecake a fresh, crisp flavor that prevents them from being overly sweet.

Oh and did I mention these are made with yogurt instead of the traditional heavy cream? I’m not going to go so far as to say they are healthy, but every little bit helps! …

Coconut Lime Sugar Cookies

I was thinking about sugar cookies recently. ( I often am, how about you?) So I decided to create a “summer” cookie based on the humble sugar cookie. I recently made some strawberry lime cheesecakes (recipe coming soon!), but my desire for tangy lime desserts was not satiated. Summer is still in full swing after all!

What else goes with lime but coconut…cue the singing. I could have gone with a margarita theme here, but sadly I was out of tequila. Rum boldly stepped up to the plate, and I am happy to say it did just fine. The rum in the cookie creates only a muted, background flavor. Add the rum glaze, and now each delicious bite has a wonderful rum kick. Sorry kids, these cookies aren’t for you.

Easy Corn Salad

Simple corn side salad with southwestern flavors.

Everyone’s favorite barbeque side dish turned into an easy, no-cook salad. Just a few simple ingredients! Lime, red onion and cilantro work together to make the corn burst full of flavor!

I know corn on the cob is king during the summer, but I have to admit I find it kind of messy. I am usually the one cutting the kernels off the cob. I have enough trouble in the kitchen keeping my clothes clean. I don’t need butter dribbling down my chin while enjoying a meal.

Wait, is that just me?

Well me and my 13 year old with braces. At least I have company for another year 😉

Make this salad with fresh corn or frozen defrosted corn. I used frozen and I didn’t even cook it. Sometimes when all your attention is on the grill, it’s just a necessity to have a effort-free side dish. If using fresh kernels I would give them a quick saute first.

This serves 4-6 as a side dish, but the recipe can definitely be doubled or tripled for your next big summer gathering. ggg

Easy Corn Salad
Serves: 4 Servings
 
Ingredients
  • 3 Cups Corn
  • ½ Cup Red Onion, Diced Small
  • 2 Tablespoons Cilantro, Chopped
  • 2 Tablespoons Lime Juice
  • ¼ Cup Olive Oil
  • Salt and Pepper
Instructions
  1. Stir together corn, onion, cilantro, lime juice and olive oil. Add salt and pepper to taste (about ½ teaspoon salt and several grinds of fresh ground pepper). This can be eaten right away, but tastes very good if the flavors are allowed to meld for a while in the refrigerator.

This recipe uses chicken thighs, an underappreciated cut of meat. After cooking, they shred so easily and are incredibly moist. They are also one of the least expensive cuts of chicken. You could go the BBQ route, which is completely yummy, but I was feeling like something a little different. I used mild green chiles, so this isn’t very spicy, although you could crank up the heat as desired. That first night, I thought it was pretty tasty.

It’s summer time and I know this blog is sorely lacking in grilling recipes. Our gas grill has recently been fixed again by my incredible hubby. It seems to like breaking about once a year. It is not that old, don’t you just feel like things are not made to last anymore? Not only do I refuse to put the grill in the landfill, but I also don’t want to spend the money. Thankfully he puts up with me, and enjoys a challenge. And I am eternally grateful, as cooking inside during this sweltering heat has been miserable.

Potato salad is the quintessential summer food. I usually make a french style potato salad with a vinaigrette, since I don’t like mayonnaise. This is to the great dismay of my husband, who loves traditional potato salad and hates the french style. He was very excited when I served this dish up, a potato salad with a creamy dressing we both enjoyed, peace restored..

Another reason I avoid potato salad is I can never seem to cook the potatoes just right. I get distracted and the potatoes are overcooked and no longer the pretty slices needed. (I may or may not have placed the prettiest slices on the top of the bowl for these pictures…).

This potato salad would go great with some Mexican Beef Sliders. I did serve this up yesterday which was Cinco De Mayo, but that was completely coincidental. Why wait for a holiday to have some delicious Mexican inspired food?…
