An easy summer salad made with fresh tomatoes, orzo pasta and feta cheese. The pasta is tossed with a basil red wine vinaigrette, perfect for an easy weeknight dinner.
Summer is just about here, so it’s time to turn off the oven and eat lots of easy meals. Pasta salad is great because it is chilled, an entire dinner that can be eaten (and enjoyed) cold! It is at the same time light, yet filling.
I used lots of fresh tomatoes for this dish, they are definitely the star of the show. Some salty feta adds a great contrast, add in the basil and this salad is bursting with flavor!
This makes a great side dish for any summer party. My sister made something similar for Memorial Day, it was so yummy. The orzo has such a great texture for pasta salad. So after I finished the bowl, I just knew I had to recreate it!
