Rich, Buttery Caramel Sauce in about 10 minutes!

I shared an apple caramel pop tart recipe a while back, but I neglected to share the recipe I used for the caramel topping. And I apologize, truly, because you need to make this incredibly easy, practically foolproof, finger-licking buttery caramel sauce.

Pop-Tarts are not necessary to make this. In fact, there might not be enough left for the topping after sampling a spoonful…or two…or three…

Making an apple pie next Thursday? Homemade caramel sauce drizzled over the top will take it to the next level. No one will know how simple it was. That can be our little secret ;)…

Fresh Tomato and Mozzarella Caprese Salsa

Easy Caprese Salsa - perfect over grilled chicken

Does anyone else have a child who doesn’t “like” tomatoes, but scarfs down salsa like there is no tomorrow? I’m not sure if that makes a lot of sense, but I’m totally willing to run with it. I love finding a version of a disliked vegetable or fruit that makes it more welcome to be served up in the house - i.e., no whining allowed!

We make salsa a lot at our house, the six of us can consume an enormous amount, especially if it’s made from scratch. I wanted to play around with some new flavors and when I spied the most teeny tiny mozzarella balls in the store, I was struck with inspiration. All the flavors of a traditional caprese salad, chopped up small and bite sized. Perfect to top our grilled chicken.

When we returned from the beach, I was astounded at how much our tomato plants exploded while we were away. Lots of little flowers, but no garden tomatoes yet. Sadly this dish was still made with supermarket tomatoes. Anyone else up north getting fresh produce yet? Speaking of tomatoes, do you call them a fruit or veggie? I know botanically speaking they are a fruit, but I don’t really think of topping my spaghetti with a fruit sauce!

It’s summer time and I know this blog is sorely lacking in grilling recipes. Our gas grill has recently been fixed again by my incredible hubby. It seems to like breaking about once a year. It is not that old, don’t you just feel like things are not made to last anymore? Not only do I refuse to put the grill in the landfill, but I also don’t want to spend the money. Thankfully he puts up with me, and enjoys a challenge. And I am eternally grateful, as cooking inside during this sweltering heat has been miserable.

Nothing screams summer and grilling like a homemade barbecue sauce. This is the one I used to make pulled pork empanadas. I like mine on the tangy side, so that’s the version I’m going to share. Roasted Red Pepper Pesto with Sunflower Seeds

Traditionally pesto is made with pine nuts. I do love pine nuts, but wow have they gotten pricey lately. So I decided to switch things up with a little more affordable choice. Sunflower seeds are full of Vitamin E, magnesium and selenium, so it’s great to use them in other ways besides just roasted and salted as a snack.

Another benefit of this pesto, my kids ate peppers without complaint. Peppers are one of the few veggies that none of them like. I was very pleased to find a way we could all enjoy them. I roasted my own, but you can definitely just use the ones in the jar to save time.

What do you get when you combine red peppers, green basil, and brown sunflower seeds? Kind of a brownish color. Yes I admit this is not the most vibrant colored pesto. It actually tasted great about two peppers earlier but I added 2 more to improve the color. But I promise the flavor is out of this world. …

We have pancakes or waffles every Sunday morning. Sometimes it just gets boring with maple syrup and butter. Pour some warm buttery banana walnut sauce over your fresh baked waffle, and I promise breakfast will never be boring again. The best part? It’s so easy you can do it with your eyes half closed waiting for the coffee to perk.

Walnuts are nutritional powerhouses filled with antioxidants, omega-3s, and vitamin E. But with organic walnuts running at least $10/lb, I look for ways to incorporate walnuts without them being the main event. Just 1/4 cup of walnuts chopped small gives the sauce a beautiful nutty element. …
