Do you remember back in August, when the internet exploded with a million creative lunchbox ideas? I know I was enthusiastic about trying all sorts of new recipes. But I have to admit, as the weather gets colder and it is pitch black when I wake up, it is hard to keep that enthusiasm up. Lunches start getting a little boring again.
I definitely love easy recipes that can be prepped ahead. Stuff I know my kids will eat without coercion 😉 But that doesn’t mean it can’t be a little fun! That’s why I was happy to partner with Welch’s to create a twist on the classic PB&J using their new Chia Concord Grape Fruit Spread.
What is the twist? Mini pancakes instead of bread! I whipped up a batch using whole wheat flour to give our lunch a little extra serving of whole grains. The pancakes can be made ahead of time and refrigerated until ready to use. And they don’t have to be mini, if you would prefer a giant pancake sandwich, go for it! They will just take an extra minute or two to cook.
If you haven’t tried chia seeds before, I think you will be pleasantly surprised. My husband, who is not necessarily a fan of chia seeds, really enjoyed them in the fruit spread. My kids liked the added texture, and they happily ate all of the pancake sandwiches I made. Can you believe there is more than 700 chia seeds per serving? What an easy way to get more chia seeds into your lunch!
One of the first things I do when buying a new product is to flip it over and read the ingredients. I was happy to see that Welch’s Chia Concord Grape Fruit Spread contains no high fructose corn syrup, and is sweetened only with real sugar. It is also Non-GMO and doesn’t contain any artificial colors, flavors or preservatives. I found it right in the peanut butter and jelly aisle of my local Stop and Shop. My jar even had a $2 coupon attached!
Once the pancakes are made, it’s easy for kids to whip this lunch together themselves. They can certainly decide how much peanut butter and Welch’s Chia Concord Grape Fruit Spread to use. I know some of my kids like to slather it on, while others only take the thinnest of spreads. Even my 5 year old was able to make his own. And he was so excited about pancake sandwiches he even insisted on eating one for breakfast the next day!

Mini Peanut Butter and Jelly Pancake Sandwiches
Mini whole wheat pancake sandwiches made with peanut butter and Welch's Chia Concord Grape Fruit Spread
- 1 and 3/4 Cups White Whole Wheat Flour 8 Ounces
- 1/4 Cup Sugar
- 2 Teaspoons Baking Powder
- 1/2 Teaspoon Salt
- 1/4 Cup Vegetable Oil
- 2 Large Eggs
- 1 and 1/2 Cups Milk
- 1/2 Teaspoon Pure Vanilla Extract
- 8 Tablespoons Peanut Butter
- 8 Tablespoons Welch's Chia Concord Grape Fruit Spread
In a large bowl, whisk together the flour, sugar, baking powder and salt.
In a separate bowl, whisk together the oil, eggs, milk and vanilla extract.
Add the wet ingredients into the dry. Gently stir together until all the flour has been absorbed. There may be some small lumps.
Heat a non-stick skillet over medium low heat. For mini pancakes, use approximately 1 and 1/2 tablespoons of batter. Cook until the surface is covered in bubbles, about 2 minutes. Flip and cook another 1 minute. Allow the pancakes to cool
Top a pancake with 2 teaspoons Welch's Chia Concord Grape Fruit Spread. Top another with 2 teaspoons peanut butter. Place one on top of the other to make a sandwich. Continue with remaining pancakes.
The pancakes can be made up to 2 days ahead and refrigerated until ready to serve.
The amount of peanut butter or Welch's Chia Concord Grape Fruit Spread can be changed to individual tastes or the size of your pancake!
