Whole wheat apple crepes topped with apple pie filling!
So my house is filled with a crisp fall air this morning. I am so happy. Something about it just makes my mornings better. Also, when it is dark in the morning my kids tend to sleep a little later. Allowing me to sip my coffee peacefully 😉
And of course with the crisp fall air comes all things apple and pumpkin, soups and stews. Who else is excited to fire up the oven without also needing to blast the A.C.?
Although apple pie is high on the list, I created this little twist using apple pie filling. The crepe batter is also full of apple cider, which adds to the apple flavor. I made these filled with yogurt, which gave a really nice contrast to the warm apple filling, almost like ice cream! Which is kind of fun for breakfast! But next time I’m going to try them with apple butter. Do you think that is apple overload? Probably not here, my kids will eat apples all day.
