Since strawberry season rolled around, I have wanted to make this dessert. Although I named it a smoothie, which I think of as a snack/breakfast food, this is so rich and creamy it definitely feels like dessert.
The smoothie has all the elements of a strawberry cheesecake. A rich, creamy filling with a crunchy crust. What is your favorite part of cheesecake? I always devour the crust first.
I don’t usually have chocolate sandwich cookies hanging around, but my sons had a party and we bought some Trader Joe Joe-Joe’s to make cookies and cream cupcakes. The leftover cookies gave just the right crunch on top of the smoothie, a hint of the chocolate crust that would be wrapped around the cheesecake.
Graham crackers could make a great substitute for the chocolate cookies.
All the great flavor of a labor intensive cheesecake, but so simple to prepare. A quick whirl of the blender, and a few satisfying whacks to change whole cookies to crumbs. Relax and enjoy a cool, creamy treat on a summer afternoon.
- 1 Cup Strawberries
- 4 Ounces Cream Cheese, Softened
- 1 Cup Milk
- 1 Tablespoon Sugar
- Cookie Crumbs
- Add strawberries, cream cheese, milk and sugar to a blender. Blend until liquified. Pour into glasses and top with chocolate cookie crumbs. Enjoy!
