Stuffed hard-boiled eggs without the “devil”. The filling has a creamy yogurt base with sharp cheddar and ham. Only 4 ingredients makes this an easy lunch or brunch dish.
So what do you do with all the eggs left after all the coloring and hunting is done?
We love hard boiled eggs, but it’s always a challenge to come up with new ideas. I’m not a big fan of mayo or mustard, so classic deviled eggs are clearly out. I went ahead with my normal mayo substitution of yogurt to create a creamy base. Tossed in a bit of diced ham and shredded cheddar cheese and I had myself an easy, tasty filling.
Once the filling is made, we have two choices. Spoon it into the egg whites, or pipe? I make my choice depending on who I’m serving 😉
I can’t think of a much better way to use up that Easter ham and decorated eggs!
- 6 Hard-boiled Eggs
- ¼ Diced Ham
- ¼ Cup Sharp Cheddar Cheese
- 5 Tablespoons Plain Yogurt
- Cut hard boiled eggs in half. Scoop out the yolks and put them into a bowl. To the bowl add the yogurt and beat until smooth and creamy. Add in the ham and cheese and stir until combined. Spoon the mixture into the egg whites.
