Relax in the morning while the oatmeal cooks, since your breakfast was prepared ahead of time! This warm, chocolaty oatmeal casserole is so easy to make!
So have I talked about my steel cut oat journey? Years ago we learned about steel cut oats overnight in the crock pot. It was like a revelation. Breakfast all done the moment we woke hungry. And even though the crock pot was a pain to clean (never did find a non-stick solution), it was so worth it. It was budget friendly, and filled everyone’s tummies. And also because, I don’t really wake up well in the the morning, and this seemed like the perfect solution.
So of course it ended.
People started revolting.
Started hating oatmeal, like in a – I don’t care how much sugar you pile on kind of way. My husband (who is a serious oatmeal fanatic) insisted that he no longer wanted this particular easy, make ahead oatmeal.
I would like to clarify that we only had it about once a week. Nobody was forced to eat oatmeal 3 times a day.
My goodness, feeding a family is hard work!
I started making overnight baked oats, and thankfully everyone is enjoying them. It’s brought around my oatmeal hating girls. And I can even get my hubby to throw it in the oven, so I can continue sleeping 😉
Scoop some out and serve with a drizzle of cream and some butter, and you have yourself a great morning.
