Coconut crusted chicken nuggets are kid-approved! These crunchy nuggets also make a perfect appetizer with a spicy yogurt dipping sauce.
Chicken nuggets are always a big hit, with kids and adults alike. Just a simple addition of some coconut makes an old classic new again. They make a great dinner, but add a spicy dipping sauce and voila- an appetizer! Just in case you need one. ‘Cause I heard something special on TV is making people snack it up this weekend.

January’s coming to an end- so you know it’s time for another Mystery Dish! Our host this month was Katie over at Made to be a Momma. She came up with a great list of ingredients including:
3. Cream cheese
4. Hot sauce
6. Orzo Pasta
7. Baby spinach
10. Ritz crackers
11. Fresh herbs ( any kind)
I knew I wanted to do something with coconut. When I was a kid, I had an extreme hatred for coconut. Of course, that was because my only exposure to it was the sickeningly sweet stuff commonly found in the baking aisle. As an adult, I may have bought real coconut initially for my husband, but I once I tasted the real thing there was no stopping me! Now we buy fresh coconuts or put shredded coconut in lots of recipes. Fortunately unsweetened natural coconut is becoming more widely available, or I sometimes buy it from Tropical Traditions.
So coconut crusted chicken nuggets it was- which made the kids very happy. I wanted something to contrast the crunchy chicken, so I chose hot sauce off the list and turned it into a dip. A little greek yogurt and ketchup make up the base, with a few drops of hot sauce to finish it off. I’ll leave the amount of hot sauce up to your discretion, since perhaps you’re not a wimp like me…
