Rich, buttery cookies with hints of cinnamon and espresso. Shape into hearts for an easy Valentine’s Day treat!
Valentine’s Day is just 23 days away! No, I’m not counting down to the infamous Hallmark holiday. My son gives me a daily update as his birthday is the 13th 🙂 He was born at night, and I was bound and determined that he would not have a Valentine’s Day birthday. Maybe cute for a girl, but for a boy not so much.
Of course, he’s all too happy to devour the candy that shows up conveniently around his birthday. In an effort to avoid more artificial colors and junk, I find that cutting just about anything into a heart shape seems to please the kiddos just as much.
These are built upon my very favorite cookies in the world – Vanilla Butter Cookies. I took the base and added in some cinnamon and espresso powder. Have you tried espresso powder? It brings a very deep, wonderful coffee flavor. I order mine from King Arthur Flour. If you don’t happen to have some, you can still enjoy these! Just use some finely ground instant coffee – like a starbucks via or some pulverized in your coffee grinder.
I really like the look of bits of cinnamon and espresso flecked through the dough. But they could just as easily be mixed in with the flour for a uniform color.
So yes, I feed the espresso cookies to my kids. They love anything coffee flavored. Before you all call the bad parenting police -I don’t let them drink actual coffee. That would be crazy. I just feed it to them in sugar coated treats. I’m sure that’s okay 😉
That being said, this could certainly be enjoyed as a more elegant, grown-up cookie.
