My family seems to have missed the news. After overindulging for one solid month, January is the time for salads and juicing. Have we not satisfied our sweet tooth with Double Chocolate Biscotti and Eggnog Cheesecake?
Popcorn is a staple snack in our house, but it’s usually served up pretty basic with just butter and salt. I normally don’t mix sweet and savory, so I made this with the intent of feeding it to the rest of the family. After a taste, the crunchy popcorn with a hint of salty cinnamon sweetness was so addicting I had to make more. Ready in just 5 minutes, it’s easy to whip up an extra batch after you polish off the first.
The cinnamon makes the house smell like cookies, and leaves a lovely brown speckle on the popcorn since it’s virtually impossible to dissolve. The honey makes it sticky sweet- reminiscent of caramel corn without the overwhelming sugar. Unfortunately it doesn’t keep well, so I recommend finishing in one sitting which shouldn’t be too hard!
I keep this healthier by using organic, GMO-free corn. My favorite being the Eden brand. It isn’t cheap, but makes lightest, fluffiest popcorn. If you divide the price by the numbers of servings it is a little better, since popcorn stretches quite a bit and is very filling. The butter is preferably grass fed, Kerrygold is the best brand I can easily get (and is reasonably priced). Cinnamon of course has so many healthful properties that it is usually named a “superfood”. It’s also know to give the illusion of extra sweetness.
So is this a health food snack? No, but it ain’t half bad 😉
