These kid-friendly muffins are full of so many healthy grains, fruits and veggies! A portable breakfast that will give you the energy you need to get through ’til lunch!
Can I pull the covers back over my head and pretend it’s still vacation? After a long, relaxing two weeks (yay for being married to a teacher!), I guess it’s time to get back to reality. Like all these people expecting food 3+ times a day. Since it’s no secret mornings aren’t my thing, I love having muffins on hand to
throw give to them.
So I can go back to sleep. 😉
Did you make some healthy eating resolutions this year? As the first Monday rolls around and everyone heads back to work it’s hard to make them stick. Easy, portable, freeze-able, and (most importantly) yummy, these muffins make healthy eating a snap.
So what’s in these beauties? Spelt, Oats, Zucchini, Applesauce, Flax, Carrots and nuts are all included to make a very moist, flavorful muffin. Kid-friendly too, they won’t even care that they are eating veggies for breakfast. I needed 3 eggs to bind all the goodness together- so they are protein packed as well. No more whining by 9 a.m. for a snack!
Why are they called morning glory muffins? A quick google search reveals that oddly, it’s not because they make your morning glorious. In fact they originated at the Morning Glory Cafe on Nantucket long ago. So not only did my state create chocolate chip cookies, but we are also credited with this incredible breakfast. Never leaving.
I would recommend using the food processor to shred the veggies so that these come together quicker. Also, a bit of raisins or a topping of coconut surely wouldn’t be out of place, I just used what was in the house at the time (hello money saving resolution). These muffins can also be made with white whole wheat flour, they just would be a bit denser. I ran out of whole wheat for the second trial batch of this recipe, and then I remembered the double chocolate spelt muffins and how incredible spelt is in muffins.
