I hope you all had an awesome Thanksgiving! Did you go out Black Friday shopping in the middle of the night? I am absolutely loving my state of Massachusetts and the archaic blue laws right about now. So happy they cannot actually open on the holiday. Let the employees and everyone else stay home and enjoy.
In case you haven’t guessed, I did. Go out at midnight that is. As this post is published I will hopefully be dozing on the couch while my children watch way too much t.v.
It’s become a bit of a tradition, with my mom, mother-in-law, sister and most recently daughters. I go for the fun of it, I’m not sure the prices are that much greater.
But I’ll tell you, it’s rough the next day or two.. I used to work nights, and I cannot even remember how I used to do it.
But now it’s time to focus on holiday parties, and baking lots of goodies. I love how the flavors of eggnog, chocolate and hazelnuts kinda scream Christmas. Mini cheesecakes alleviate any worries about cracked cheesecakes, and removing them from the pan. Plus the portion size is just right, so you can sample the goodies everyone else made 😉
I use this great mini cheesecake pan from Chicago Metallic. It has removable bottoms, so I can just run a knife around the edges then just pop that little guy out.
I’ll admit this has kinda a lot of layers, but hey it’s the holidays. Time for something a little special right? The cookie crust is made of a chocolate version of this vanilla butter cookie with a few hazelnuts thrown in for good luck. A bit of eggnog is thrown into a super simple cheesecake filling. Then comes a layer of dark chocolate ganache, followed by whipped cream seasoned with even more eggnog. Oh, and more chopped hazelnuts on top.
