Flaky pastry surrounds sweetened apples and walnuts topped with a buttery caramel glaze.
Did you eat pop-tarts for breakfast growing up? I did, quite a bit really, but only ever the chocolate fudge. But since it’s fall the fudge version will have to wait, today I’ll share with you an apple pie version of your favorite childhood breakfast.
Since I don’t usually buy that sort of stuff anymore, I surveyed the kiddos to see if they remembered eating a pop tart. Initially they said no. Then they start to weave a tale about how I likely fed them pop tarts and donuts every day when they were little. And how they probably even remember those good old days. Before I became the crazy organic lady 🙂
I at least attempt to make breakfast a little more nutritionally sound these days. I made them with a whole wheat crust and threw in a few healthy walnuts. Can I declare these babies breakfast? Why yes, I think so.
But never fear, if these don’t look like breakfast to you, I certainly don’t think anyone would object to a new version of your Thanksgiving apple pie. My problem with a traditional apple pie?
Crust to filling ratio. Being completely honest, I’m only in it for the crust.
These little babies have tons of flaky crust surrounding the apple filling. If that wasn’t enough, they are then drizzled with a buttery rich caramel sauce. Heaven on a plate. A little vanilla ice cream wouldn’t be out of place.
But that might be a stretch for breakfast 😉
Ingredients
- 1 Pie Crust
- 1/2 Cup Caramel Sauce
- 1 Cup Diced Apples
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Brown Sugar
- 1 Tablespoon White Sugar
- 2 Tablespoons Chopped Walnuts
- 1 Egg + 1 Tablespoon Milk (for wash)
Instructions
- Mix together the apples, sugars and lemon juice.
- Roll out pie dough thin and cut into rectangles. Top 1/2 of the rectangles with a few spoonfuls of the apple walnut mixture leaving a border. Beat together the egg and milk. Brush the egg wash around the border of the rectangles that have apples on them. Take the remaining dough rectangles place over the filled rectangles. Press down the edges with a fork to seal. Place pop tarts on a silicone baking mat or parchment lined baking sheet. Refrigerate the pop tarts for 15-30 minutes. Preheat the oven to 350.
- Brush the tops of the pop tarts with the egg wash. Make a few small cuts on the top. Place in preheated oven for 22-25 minutes or until golden brown. Remove
- Warm up caramel sauce so that it can drip from a spoon. Drizzle pop tarts with caramel.

Even as a teenager rebelling against my childhood of organic wheat grass (I didn’t have my first twinkie until college), commercial pop tarts grossed me out. I loved the idea but the paste-like crust and super-sugary filling were just too much.
This looks like what I was dreaming of: flaky crust, real fruit filling, and that caramel drizzle looks to die for. I can’t wait to try these! Pinned!
