It’s Taco Tuesday! Okay, maybe you don’t have a child obsessed with the Lego movie? Is that not a common phrase at your home? I am not completely sure if that expression came from the movie, or it existed before. It’s fun to say and a favorite at our house. But it really doesn’t matter what day of the week it is, we always love tacos.
I like to make an enormous batch of taco meat so that we can have leftovers. In order to keep those leftovers interesting, we tried making a grilled cheese. Warm taco meat, avocados, beans and lots of cheddar cheese between slices of buttery whole wheat sandwich bread, what’s not to love? I feel a little cheated. Many years of my life have gone by without me enjoying this incredible sandwich.
Serve with a side of chips and salsa and you have a complete meal. Never let the family complain about leftovers again. I have given approximate amounts in the recipe, but really you can make it work with the amounts you have on hand.
Do you use taco seasoning mix or do you make it by hand? I am working on writing down my recipe, which has been a bit challenging since I like to just toss the seasonings in without measuring.
