I know it’s Father’s Day weekend. Are crepes too dainty? Maybe I should have posted a more manly dessert. What a manly dessert is, I’m not even sure. I think if we take chocolate crepes and stuff them up with lots of thick raspberry ganache and huge dollops of whipped cream, any dad would be pleased.
Plus it’s a no-bake dessert perfect for the heat. Just a little time at the stovetop. Make them in the morning when it is cool, and stash in the fridge until dessert time. Crepes are freezer friendly too! I’ll tell you a little secret, these babies were in the freezer since Easter. Warmed them up and they tasted like new. Oh. So. Delicious. So feel free to make up a huge batch and freeze for later.
Wrapped up tight in plastic wrap, I would say you have a solid three months to use them. I’ve heard that it’s good to separate them with waxed paper, but I’ll be honest. That’s a bit too much work, so I’ve never done it. And they separate just fine when defrosted. Also, if you are (or have in the house) a late night snacker, it’s nearly impossible to pry off just one from the freezer 😉 So they will be safe and sound when you are ready to use them.
You may have a bit of ganache left over. Create some drama on the plate, pretend like you are in a fancy restaurant. A drizzle there, an elegant swirl there.
Now if I could just figure out where that busboy was- these dishes are really starting to pile up 😉
