Everyone loves a Mexican dip with some salty tortilla chips. But who says a boring layered dip can’t get gussied up every once in a while? Perhaps just for a smaller crowd, or those occasions where chips and dip aren’t appropriate.
(wait – what? Does that occasion exist? )
Seriously I cannot express my extreme giddiness over this concept. A rich flakey crust filled with chipotles, black beans, cheese and fresh salsa. Only then I didn’t feel like chopping all the stuff for fresh salsa. Then I had this idea of a flavored crust. Cumin and coriander are certainly obvious favorites for Mexican meals, so a teaspoon of each and I had the most amazing dough. I attempted to verify this amazingness by grabbing the first taste tester to wander by and asking them what the dough reminded them of. I promptly was told “lime”. Well, um nope, no lime. But I guess he was in the right line of thought. Actually not a bad idea though…
I kept going until someone confirmed the dough tasted like tacos. Bingo!
Ignore the lengthy process folks, this is what happens when all your official taste testers are children. Trust me when I say this crust is cool. Lots of layers.
But not 7. Because that’s already been done. I like to live out on the edge of new frontiers.
