It’s time for another mystery dish challenge! Our host this month was Christine over at I Dig Pinterest. She came up with a great list of ingredients, and I was excited to see spinach and cream cheese which go so well together.
I love spinach! I buy one of those gigantic 1 lb tubs of organic spinach each week, and throw some in everything we eat all week; sandwiches, eggs, soups, smoothies (shhh!). I’m pretty blessed that my kids tolerate my throwing greens at them constantly, and they eat them with minimal complaint. But if I bake the spinach into cheesy squares, they will consume them with a gusto normally reserved for sweets.
We actually created this recipe for my sweet girl’s 10th birthday. She wanted her party to have brunch foods. The menu included monkey bread and dessert was coffee cake. Smart Girl! She took care of the pastries on her own. But the squares were up to me.
The cream cheese lends a really wonderful texture to these squares. But cream cheese can taste kind of bland, so the sharp cheddar and salty feta round out the flavor. I recommend serving them room temp, as they firm up a bit after cooling making it more of a finger food.
But don’t wait for your next party to serve these up. Uncut it is a delicious spinach casserole, perfect as a side dish.
