Are you curious about some of the more interesting grains? Tired of boring old whole wheat? I think spelt is one of the easiest and most delicious grains to use. It has a nutty delicate flavor that goes really well with almost any baked good, but particularly chocolate.
There is a bit more monetary investment in the spelt flour. I take advantage of amazon’s subscribe and save program to find more reasonable prices on spelt flour or I grind my own. Oddly enough, grinding my own is not always less expensive. (?)
So why spend the extra money? Spelt has lots of nutritional benefits, such as being rich in B vitamins and minerals like magnesium, manganese, phosphorous and copper. More importantly, it is water soluble which means your body can easily extract the necessary nutrients.
Plus, I get bored easily. Experimenting with different grains is an easy way to change things up. As I’ve mentioned before, if you want perfectly uniform cookies I recommend using a disher. Size #40 for little cookies, and size #20 for big ones.
If you decide to bake up the cookies immediately after mixing them, they will be flatter and crispier. I like mine on the fatter side, so I refrigerate the dough after scooping. It doesn’t need to be for a long time, even a half hour of chilling will help the dough spread less.
