My children are obsessed with cottage cheese.  I bought a package on a whim recently and they are enamored.  Eating it unadorned, simply on a spoon.  Well, that was boring the pants off this mama, so I decided it crank things up a few notches.

These sweet mini peppers are a bit deceiving, the red ones certainly look like they could pack a punch, but they are just as sweet as their larger cousins.  None of my children like peppers, so I was quite curious about their reaction.  Although they wanted to just eat the stuffing (dip? stuffing?  both!) I insisted they try it inside the pepper.  Two loved it.  The other?

Dipped zucchini sticks into the cottage cheese filling  instead.  It’s a win either way, don’t you think?

So go ahead and use the stuffing as a dip.  With lots of crunchy veggies.

Avocado and Cottage Cheese Stuffed Sweet Mini Peppers

Ingredients

  • 1 Cup Cottage Cheese
  • 1 Ripe Avocado, Diced
  • 1 Green Onion, Thinly Sliced
  • 1 Tsp. Garlic Powder
  • Salt and Pepper to Taste
  • Approximately 20 Sweet Mini Peppers

Instructions

  1. Stir together avocado, cottage cheese, onion, and garlic. Add a bit of salt and pepper to taste.
  2. Cut off the tops of the mini peppers and remove the seeds and ribs. Stuff the peppers with the cottage cheese mixture.

    This is too cute! We make chip dip with cottage cheese and stuff, and every once in a while scoop something healthier than a potato chip up with it. But at it’s heart, chip dip is one of the family comfort foods–even my brother, when he returns from overseas, picks up a carton of cottage cheese, a bag of chips, and the seasoned salt shaker.
