So lets get back to pizza.
I admit I get a little jealous after Thanksgiving when I see all the ideas for leftover turkey around the blogosphere. By the time Thanksgiving is over in my family, there are not days and days of turkey overload. We have enough for maybe one night of leftovers. So I wanted to create something that would use up all those veggies that may be left (is your family eating all the turkey too?)
Pizza is a surefire way to consume more veggies. Tomato sauce didn’t seem right, so I made a white pizza with ricotta as a base.
Certainly you don’t have to wait for Thanksgiving to enjoy this meal. Although I admit it may be a bit labor intensive if not using leftovers. Create a meal plan that has roasted squash a few days before you want to make this pizza and it will come together in a snap.
