The common name for this dish is dutch apple pancake, but I don’t find much cake going on here. It is essentially a crepe batter, masquerading as a giant pancake.
Much easier than pancakes, after assembling you are free to go about your morning while it puffs busily in the oven, filling the house with a warm cinnamon smell. No standing and flipping endlessly. The best part is that the whole family can enjoy a warm pancake hot from the oven at the same time.
Why Pears? Isn’t it supposed to be a Dutch Apple Pancake? Well, pears are a fall fruit too, and I feel they are hidden in the shadow of apple’s spotlight.
Just kidding…I only had one pear and one apple in the house. Feel free to use all apples or all pears! In fact, I’m thinking it might be great with all kinds of fruit, we’ll have to start experimenting.
Similar to a souffle, it puffs up dramatically during baking. For an even larger “puff”, preheat the pie dish in the oven before using. Also like a souffle, it deflates equally dramatically after leaving the oven. (FYI, picture below was just a few minutes after leaving the oven, the sides were much larger right out of the oven.)
