The school year is approaching and that means busy mornings around here. I’ll openly admit early hours are not my best time. I try very hard to plan ahead to make the mornings smoother. I make extra batches of Waffles, Bagels or Crepes to pull out for a quick breakfast.
But what I really love in the morning is sausage (and bacon.. but let’s try to stay focused). These patties help to make a complete meal out of eggs or a breakfast sandwich. Better yet, you can use them to make biscuits and sausage gravy. I make these little patties about the same size as the ones in the frozen section of the supermarket. But unlike those, these are free of nitrates and any other kind of preservative or questionable ingredient.
I cooked them before freezing, making it even faster and easier to warm them up in the morning. We don’t own a microwave , but fortunately I can fit 6 patties in my teeny tiny cast iron pan (Which I have been finding all kinds of uses for since my last mention of it).
Ever wonder what makes breakfast sausage taste like breakfast sausage? It’s sage. I buy Frontier Rubbed Sage, specifically for this recipe. I truly have no idea what else to do with it and I’d love to find more uses. Suggestions?
