A super fast and elegant side dish made from the most humble of vegetables. Took me about 10 minutes to prepare. Shaving the zucchini gives it a unique texture and look that has a certain wow factor. The pecorino adds a nice salty bite.
The zucchini is completely raw, leaving many of it’s beneficial nutrients intact, such as vitamin C and potassium. We don’t often eat as many raw veggies as I would like, so I just love serving up the zucchini this way.
I used a simple vegetable peeler to create the ribbons of zucchini, but if I had a mandolin I would have used that. (Oh mandolin, how I covet thee!)
I peeled about halfway down, then flipped the zucchini over and started the other side. Of course, if you use a vegetable peeler, you will end up with zucchini “middles” that you can shave no further. What to do with these? Chop ’em up and add them to an omelet to get more veggies in your breakfast. If you have a mandolin this shouldn’t be an issue.
Add some shaved pecorino romano cheese, toss with the dressing, and it’s done. Really, that’s it.
